FAQs

What is the hardest part about making macarons?
The hardest part about making macarons is achieving the right consistency during the macaronage process (mixing the almond flour, powdered sugar, and meringue). The batter must be smooth enough to form glossy peaks but not too runny. Another challenging step is ensuring the macarons develop their signature "feet" during baking. This class breaks down each step with expert guidance, making these challenges manageable.

What is a macaron class?
A macaron class is a hands-on cooking experience where participants learn how to make French macarons from scratch. This includes preparing meringue, mastering macaronage, piping the batter into perfect circles, and baking them to perfection. You’ll also explore creative fillings like ganache and buttercream. In this NYC class, a professional Pastry Chef Instructor guides you step-by-step through the process, making it ideal for both beginners and experienced bakers.

Is it cheaper to make your own macarons?
Yes! Making macarons at home is much more cost-effective than buying them from a bakery. While high-quality macarons from a patisserie can cost $2–$4 each, making them yourself only requires affordable ingredients like almond flour, eggs, and sugar. This class equips you with the knowledge and skills to consistently recreate macarons at home, saving you money while impressing your friends and family.

Are macarons very unhealthy?
Macarons are indulgent treats but relatively small in size, so they can be enjoyed in moderation. They are made with simple, high-quality ingredients like almond flour, egg whites, and sugar, which are naturally gluten-free. This class emphasizes using fresh, wholesome ingredients, making the macarons as delicious as they are satisfying.

What is the difference between French macarons and American macarons?
French macarons are delicate meringue-based cookies sandwiched with flavorful fillings like ganache or buttercream. American macarons, sometimes referred to as macaroons, are coconut-based cookies and are much denser. This class teaches you to make authentic French macarons, which are widely regarded as a symbol of Parisian elegance.

What is so special about macarons?
Macarons are beloved for their delicate texture, vibrant colors, and sophisticated flavors. They are gluten-free, making them accessible to many, and their intricate preparation process adds an element of exclusivity. In this class, you’ll learn to elevate your macarons with premium fillings like raspberry ganache and white chocolate passionfruit buttercream.

10. What is the most popular macaron flavor?
Classic flavors like vanilla, chocolate, and raspberry are universally loved. Unique flavors like salted caramel and pistachio are also fan favorites. During this class, you’ll explore flavor variations, including fruit preserves, ganache, and buttercream fillings, to craft macarons that suit your personal taste.

What do I need to make macarons for beginners?
For beginners, making macarons requires almond flour, powdered sugar, granulated sugar, egg whites, and food coloring. You’ll also need tools like a piping bag, baking mat, and a kitchen scale for precision. In this class, all ingredients and equipment are provided, and the chef will guide you through each step, ensuring a smooth and enjoyable learning process.

What should I wear to a cooking class?
Wear comfortable clothing and closed-toe shoes for safety in the kitchen. Aprons are typically provided, but feel free to bring your own if you prefer.

The instructor was very friendly and helpful, and we had a lot of fun. It was a great time and I would go again.

Hats off to the instructor and his assistant - they made the whole process look quite simple and a lot of fun. I had already tried three times to make french macarons from online videos, without much success. That was when I decided I really needed a hands-on classroom experience to help me understand exactly where I went wrong. We worked in small groups of 3 students each, taking turns sifting almond flour with sugar, whisking aged egg whites into a stiff meringue, and folding blended flour into peaked egg whites to make creamy macaronage. This class gave me much needed confidence to try again, (and perhaps make new mistakes), but knowing I will get it right, with more practice. I can see now that its okay to get things wrong, as long as we do not give up trying to set it right. Thank you Chef Felix, for a delightful evening.

I had fun and learned a lot, the chef is very knowledgeable and patient, and the macarons are very tasty too! I can’t wait to try the recipe at home. I was worried that working in a team of 4 would not let me have much hands on, but it was instead just right. Definitely recommended!
